Cut the bread into thin slices and bake it on the grill or toaster.
Spread cream cheese with low fat or cottage cheese on it. Cut the smoked salmon fillet, into strips and make small rolls. Place the salmon on top, over the cheese. Cut 2-3 thin slices of a ripe peach, spreading them between the salmon rolls.
Garnish with Entopia balsamic glaze peach .
Add freshly ground pepper and garnish with arugula, basil or raw broccoli leaves.
